Hi I’m Stephen, The Big Ginger Chef.
I’ve spent over 35 years cooking around the world, learning the craft the hard way, as a child having to stand on a milk crate to flip burgers in the outback of Western Australia, working the line in Michelin-starred kitchens across Europe to being taught traditional Thai by Miss Mae (aka Micheal) in Bangkok.
That journey taught me what matters. Long hours, hot pans, open flames, and the discipline it takes to make food taste right every single time — whether you’re feeding miners, locals, or fine-dining rooms where nothing slips through.
Now I’m bringing that experience home — and taking it further. Beyond the kitchen, I’ll be out there exploring food culture as it evolves: reviewing what’s worth eating, breaking down real techniques, and cutting through trends to show what actually delivers on flavour.
